Nothing should interfere with the Wii console. The sensor bar is also not a sensor bar in any kind of sense. All it does is produce two IR beams that the Wii-mote picks up and uses to calculate movement data. This data is sent directly from the Wii-mote to the Wii, not involving the sensor bar. If you put two candles in front of your TV, the Wii-mote will still work as usual.

If anything is being interfered with, it is the Wii-mote. It is fairly sensitive to heat sources (which give off IR). For example, your TV can be mistaken as a third light, or maybe a candle or lamp. But an Xbox or DVD player's LED? I doubt it, especially if it's just your Wii that is next to it and not the bar.

As far as Red Steel being jumpy and nothing else doing the same, I'd simply blame it on Red Steel.

Sometime when I boot up my wii and my remote is upside down, when I put my remote in my hand the cursor is upside down, I need to point my remote off the screen and back to the screen to get it back like it should, weird.

Also when I used Opera the beta version, it crashed on me, and my remote wasnt working anymore, I tried unplugging my wii but it was still dead, so I hold the red button for 15 second at the start and I pressed the sync button on my remote (like the howto on nintendo.com said), still dead, called nintendo (redid all the step), they said that I had to send my wii to them and I will get it back in 21 days. The day after, I started my wii, pressed that red button on wii for 15 second, pressed the sync on my wii remote, waited a little (for thinking cause it was still not working) and after I thought, humm why not try to press back the dam red button to see what happen. Thats what the think they forgot to put on their site. It was working after.

in zelda, when i run up to a climbing vine and hold forwards, i jump onto the vine. then SOMETIMES i will start walking to the left rather than up the vine (since up is being held)

this happens on a frequent enough basis, maybe 10 or 15 times since i started playing (now upto the hidden village)
I always put that down to the particular camera angle which would then make sense. If the camera was at a different angle than behind Link then up would be left and left would be up from Link's point of view you know.

the analog direction in zelda is determined by the camera angle. it was a poor decision to use the same style of controls while climbing as most people think of that as a two dimensional style of control.

just recenter the camera after climbing on anything, it is just like playing the OoT.

I'm waiting for a replacement Wii from Nintendo right now, actually. Mine starting freezing (black screen) periodically about two weeks after I got it on launch day. Last week, it got so bad that I had to reboot it 15-20 times just to get into the main screen. I called them on Tuesday and they still haven't even shipped the new unit. I'll be giving them another call tomorrow to see what the holdup is.
